Chocolate Orange Drizzle Loaf Cake

I am delighted to present this month a recipe for Chocolate Orange Drizzle Loaf Cake. Chocolate and orange combinations are a charming classical flavour. My family simply adore this bake and it remains to be one of the most popular loaf cakes in my household. The sponge has orange zest running through and then soaked throughout after baking by orange syrup, which makes a moist crumb and finally a chocolate topping to finish off. Sprinkles are purely optional for that extra little touch should wish to add them.

Hi Rosie,

I've tried making this cake twice, but failed.. My cake sank in the centre...Please tell me what I had done wrong....

I followed exactly the same amount of ingredients as this recipes required. The only thing I did not take note is to mix the batter gently using spatula after adding flour, milk and egg. I used my electric mixer to beat until well combined. Is it because of beating too much that cause my cake collapse??

I want to try it again.

Hi Connie, first of all I’m sorry to hear you’re having problems with this recipe. I have tried to cover all matter of things that may have been a contributing factor as to why your cake failed by sinking in the centre. I do hope this helps and I have to admire you for not giving up :0) I’m keeping fingers crossed now this time your cake will come out perfect for you!

My advice here is :-

1.Ensure your oven is preheated to the correct temperature before placing your cake mixture into the oven to bake.

2.If you mix for too long when the flour is added, the texture of the cake will come out heavy not light due to the glutens in the flour being over mixed.

3.Do not open an oven door to check the baked good until at least ¾ of the cooking time has elapsed or you cake will collapse and sink the middle. Open and close the oven door gently as yet again this can also contribute for the cake to sink in the middle.

4. Also under baked cakes if brought out of the oven and not fully baked through will collapse and sink the middle.

5. Ensure before you fully remove a bake from the oven test the centre of the cake with a toothpick or skewer to see if any unbaked mixture clings to it, if so you need to bake your cake until the toothpick or skewer becomes free of any mixture when testing. A recipe with timings I find is only a guideline to work towards.

6. Properly baked cakes should be evenly brown, with slight shrinkage from the side of the tin and firm to touch.
