Vanilla Apple Cake ~ September Bake

This month’s recipe for Vanilla Apple Cake is perfect for September when autumn is just around the corner and the orchards are brimming with a huge variety of delicious apples! Comfort food plays a big part in the autumn and winter months and this cake delivers just that, with its deliciously moist vanilla sponge and chunky apple wedges. Savour this rustic looking cake with hot custard or ice cream but it could stand well on its own to be enjoyed with a nice cup of tea or coffee.

A cake with apples sounds like a great idea and I love apples in cakes. Can I substitute demerara sugar with something else (brown sugar) as I am not sure that I can find it?

You can definitely substitute the demerara sugar for any sugar you have, brown sugar, granulated sugar etc

Whilst we would really enjoy taking this to another level of a fortnightly event both Rosie and I feel at this present time it would be in Sweet and Simple Bakes favour to keep to a monthly bake. This is due to commitments and time factors. However we do not rule this out for the future!
